Embark on a culinary adventure through Calabria, Italy, where bold flavors reign supreme.
Delight in bright citrus, savor the tang of Calabrian chili peppers, and revel in the richness of sun-ripened tomato. Let each bite from this season’s collection transport you to the heart of Southern Italy.
Buon appetito!
This Season’s Vino
The Statti Winery is the oldest of Calabria, owned and run by the Statti family since the 1700s. Gaglioppo is a red Italian grape mainly cultivated in Calabria, where it is used in several DOCs.
The grape produces well-structured, medium-bodied red wines with flavors of crushed red berries that are often accompanied by herbaceous, balsamic, and licorice notes, pairing well with meats, pasta, or seafood.
Enjoy a glass with each of this season’s specialties.
Originating in Southern Italy, lupini beans are a beloved staple enjoyed for their unique flavor and high protein content. Enjoy these Calabrian Pepper Lupini as a snack straight from the bag or toss them into your favorite salads or pasta dishes to add a punch of spice and crunch. Enjoy with or without the skin.
Le Ferre’s superbly blended EVOO is infused with Italian hot pepper. This oil is a kitchen essential and gives vitality to any dish which it is added to. Bold, spicy, and captivating. Try drizzled over pizza, in soups, or to add a kick to any salad dressing.
Directly from Calabria, this Yellowfin Tuna is marinated in Extra Virgin Olive Oil. The tuna is carefully fished in accordance with protection of the seas and using traditional Calabrian ingredients and preservation methods.
Once jarred, the tuna is allowed to ripen for up to a year before distribution. During this time the intense flavor of tuna matures and unites with the delicate taste of the olive oil and seasonings.
Allemandi Paccheri Pasta
Allemandi has become Dalla Fonte’s preferred pasta producer, consistently rising above the rest. This season, we are featuring one of their regional pastas commonly found in Calabria, paccheri. Allemandi Pastificio uses only local cage free eggs, durum wheat flour, and the same artisan techniques of their ancestors. Allemandi’s Paccheri pasta is a large shape common in the Calabrian region. Enjoy paired with tomato sauce or create the Pasta alla Puttanesca recipe from Italy in Your Kitchen.
Masseria Mirogallo Tomato Sauce
Since the 1800s, one of the largest farms in Lucana Valley of Basilicata, Italy has been owned by the Mirogallo family, who specializes in the cultivation and preservation of heirloom varieties of fruit and vegetables. This tomato sauce is their family recipe, flavored with garlic, capers and olives to create a gutsy tomato pasta sauce which perfectly matches the short pastas common in Southern Italy.
Agostino Recca Capers in Sea Salt
Agostino Recca is known for its premium seafood products, particularly anchovies and capers. The company is renowned for its traditional methods of preserving and packing to maintain the high quality of their ingredients. These capers have a tangy, briny flavor excellent in salads, fish dishes, pasta, and more. Briefly fry in olive oil for a crispy texture. Mix with sour cream, Greek yogurt, or cream cheese for a citrusy spread. Perfect for a zesty charcuterie board with cured meats like Italian mortadella and Spanish chorizo. Remember to rinse before using.
Scuppoz Limoncello Biscotti
Scuppoz comes from the Italian phrase “schioppare dei bicchieri,” meaning to toast or celebrate with a glass. We hope you’ll do the same with these unique sweet treats. Scuppoz products began over 40 years ago from a passion for gathering gentian root and mountain herbs.
The family transformed these local ingredients into restorative amari and digestivi for sheepherders and villagers. Fourth-generation artisan Anna Lanetti has combined these traditional elixirs into delightful biscotti, baked with stoneground Italian flour. She serves them in her tasting room and café and offers them to the best enotecas, shops, and wine bars in her area.
Marinated Figs in Honey
Called “Fruhmieli” in Italian, these amazingly tender figs are dried under the Calabrian sun, then sliced and marinated in rum, and finally submerged in delicious chestnut honey. The three intense flavors of fig, rum, and chestnut honey are beautifully balanced. Enjoy them with meats, cheese, ice cream, fruit, desserts, or on their own.
Amarelli Black Licorice
In the height of summer, bright yellow licorice flowers blanket vast swathes of the Calabrian countryside. Thanks to a combination of fertile soils and a unique climate, the region boasts the best licorice in the world. Since 1500, the Amarelli family has been harvesting this plant and creating candy from the “Black Gold of Calabria.” Enjoy these small bites and their unmistakable taste.

MIke's Playlist
According to Mike, the only way to prepare a meal or sip a glass of wine is with music playing in the background. So each season he curates a collection of his favorite songs for enjoying your Tavola and Tavola + Vino boxes.
Our Spring Release celebrates the flavors of Northern Italy that we will experience on our first producer trip to Piedmont and Bologna in September 2024. To prepare for our adventure, we created a playlist suited for sipping Barbera in wine country this Fall.
